Bouguessa’s Guide To: Huda Kanj’s Green Kale and Brown Rice Salad

Lebanese chef Huda Kanj @HealthybyHuda shares a delicious salad recipe to up your greens game this year.

Ingredients

Salad:

1 cup cooked brown rice

6 cups slightly packed chopped
kale (1 1/2 bunches. Remove stems).

2 crisp sweet apples, cored and
chopped. (I use gala apples)

1 cup walnuts, lightly toasted
and roughly chopped

1/2 cup dried cranberries

4 oz vegan cream cheese.
(Optional) goat cheese

Dressing:

1/2 cup olive oil

1/4 cup fresh lemon juice

2 tbsp honey

1 1/2 tsp Dijon mustard

Pink salt to taste

Directions:

1- Cook rice according to direction on package and cool completely. Whisk dressing ingredients. While rice is cooling, whisk dressing once more then pour 3/4 of the dressing
over kale and toss until kale is evenly coated. Cover bowl and chill 15 minutes (adding the dressing and letting it rest helps soften kale a bit).

2- Toss remaining dressing.

3- Remove salad from refrigerator, add apples, brown rice, walnuts and cranberries.

4- Pour remaining dressing over salad then toss. Add vegan cheese or goat cheese and toss just slightly.

Serve or store covered in refrigerator for up to 4 hours.
